Packability
Packability is how small a garment compresses for carrying, usually described by the volume it occupies when stuffed rather than by weight.
It matters because a jacket in your bag protects you and a jacket in the hotel does not. Packability is really a measure of how likely you are to have the garment with you when the weather turns.

In a 38 litre carry-on, a structured jacket costs roughly what three t-shirts, a fleece and a pair of trousers cost combined. That is the real trade, not weight.
What creates it
Thinner face fabric with lower denier, no lining or a half lining, minimal internal structure, and lighter hardware. Each saves volume and costs something: abrasion resistance, comfort against skin, shape, and pocket count.
The limits
Do not store insulated garments compressed. Loft is the insulation, and prolonged compression permanently reduces it, faster in synthetic fills than in down. Compress for the journey, store loose at home.
Uninsulated shells tolerate long compression fine, beyond creasing that mostly drops out with wear.
